Sometimes I am just in the mood for something spicy. I feel like spicy chicken in most forms comes in wings and kicks up during the fall. However, I love a good buffalo flavor any time of the year!
Here’s how I make my Buffalo chicken bites. I love having them solo, on a salad, or with a baked potato.
Ingredients
1 lb chicken breasts, but into bite sized pieces
olive oil
salt
pepper
1 tsp garlic powder
1 tsp paprika
1 tsp onion powder
parsley or chives
1/2 cup (or more) Buffalo sauce (I like Frank’s!)
Directions:
- Season your chicken breasts generously with above spices
- IMPORTANT: let the chicken marinate for at least half an hour if you can
- add olive oil to a cast iron skillet, preferably, and let it heat up
- add chicken and let the chicken cook without touching it for at least 5 minutes on one side, and then flip
- continue cooking the chicken until it is cooked thoroughly
- top with parsley or chives!
- Enjoy
